8 Alexander Downs lamb chops (about 90g each)
1/4 cup your favourite bottled Indian curry paste
1 Tbsp. lime juice
3 Tbsp. chopped fresh mint plus a few sprigs for garnish
Salt to taste
Prep: 10 minutes Cook: 8 minutes
- Brush the Alexander Downs lamb all ocver with the curry paste. Cover and Marinate at room temperature for 20 minutes. Meanwhile, combine the yogurt, lime juice, mint and salt in a bowl: cover and refrigerate until the lamb is ready.
- Turn the grill on to medium high and cook 3-4 minutes per side, or until cooked to you liking. Serve with the yogurt alongside for dipping.
